Quail Casserole Recipe
Quail Casserole
4 quail, split down back
salt and flour
1/3 cup margarine
1/2 pound fresh mushrooms or one small can
2 tsp parsley flakes
2 cups white wine or water
Salt and dust quail with flour. Saute in margarine
in skillet until brown. Place quail in casserole and pour pan
drippins over bird.
Add mushrooms and parsley. Pour enough wine
in casserole to half cover birds. Cover casserole and bake at
350 degres for one hour.
